Simple, cause it breaks the norm. Anyone who has enough talent and patience can produce any bit of anime art or fiction. The average peon on ffanfiction.net wouldn't dream of crossing the line to make his or her beloved characters fat or full of air or whatever you have.

Another reason why some create art and fiction in the FA field is due partly because either A: They know they aren't alone and wish to explore thier artistic skills (I being one of those people) or B: They already love to draw/write, so why not do it to not only stimulate yourself, but others as well.

Granted, its much better in this field as opposed to the normal field of anime fanart and fan fiction to produce something decent as opposed to being a lurker or to be in the other line of work as to what I like to refer to as the "Instant Gratification People" (they know wh o they are.)

i would say it comes down to your DNA
what makes someone a homosexual?
what makes someone an anthro lover?
and what makes someone a weight gain or inflation lover?
its party in the genes
and also in the enviroment you live in
your exposed to only skinny girls in the adds, and the pictures, your going to find that thats what the general populace believes is "sexy"
you grow up in an enviroment where the above said isnt necessarily true, and then i believe there will be more overall non-twig fans out there.
then, theres the power.

and when someone has so much weight on them that they cant move (the extreme weight gain and inflation), the other person feels like he has all the power over her.
probably why people like massive weight gain.

as for the not-so extreme weight gain, i believe that is also a power issue. im not really going to go into it, cause i think it would be a little uncomfortable for some people.

you arent likely to see a two ton lady walking down the street, or inflation in your backyard, so people imagine.

Well I can only speak for me but I have been around for A LONG TIME. And I've seen people come and go and I have never been a fan of that so I keep on going till I can no longer draw but also I do like the attention of people likeing what you like doing. Because even though I have been in the community for a long time I am just now starting to get a solid base of watchers and I do greatly care about the people that watch me so I try to not disappoint themwhich is easier said then done sometimes. But I love it.
As far as the whole Fetish thing I mean someone already stated its DNA and where you grew up and Ive always loved bigger women
its just who I am
